Produce

Most of our produce is purchased at the market in Koh Kong, ensuring freshness and quality. We place great emphasis on buying Cambodian products where possible, rather than imported goods, thus reducing the environmental impact of transportation and supporting the local economy. Seasonal produce is therefore used with the best of the seafood, fruits and vegetables available at the time of the year.

Some food, especially fruits, are purchased in Tatai village itself, we hope to continue and increase our support to local growers as time goes on.

We now use Cambodian grown and made peanut butter, and Koh Kong honey and pepper from Kurata Pepper. We do this to support these local initiatives and to provide greats fresh flavours to out guests.

A limited number of foodstuffs are already grown at Rainbow Lodge such as ginger, jackfruit and limes. We have also had successful crops of cucumbers, and recently grew our first pumpkin. Some fruit trees have also been planted.

In addition, all sand used in the construction of Rainbow Lodge been sourced locally from Tatai and the reed mats used on the roofs from neighbouring province, Kompong Speu.
